Chicken & Veg Risotto

Ingredients
  

  • 2 chicken breasts cut into bite sized pieces.
  • 1 chopped leek
  • 1 crushed garlic cloves
  • 5 or 6 medium mushrooms halved
  • 2 Peppers cut into large pieces
  • 1 stick celery
  • 800 ml chicken stock
  • 1 tablespoon mixed herbs
  • 300 g arborio rice

Instructions
 

  • Put all ingredients into the IP
  • Stir well
  • Put on pressure cook/manual for 12 mins
  • Allow to settle for a couple of minutes and then carefully release pressure
  • Stir to mix well season to taste
  • Serve with grated cheese
