Nepalese Turkey Curry

  • 6 cardamon pods seeds only
  • 1/2 tsp fennel seeds
  • 2 tsp corriander seeds
  • 1 tsp cumin seeds
  • Grind together in a mini chopper or blender
  • Peel and roughly chop a knob of ginger, add to blender
  • Peel 4 cloves of garlic, add to blender
  • Blend to a paste
  • Chop 2 onions and saute until brown, add paste and fry to release fragrance
  • Add thin turkey steaks to pot
  • Add 1 tsp turmeric and 1/2 tsp hot chilli powder, deglaze pot well with a little stock
  • Add 200ml chicken stock and a cinnamon stick
  • 15 mins Pressure cook/Manual & NPR
  • Remove the meat and set to sauté, stir in 2 tbsp mango chutney. In a cup mix together 3 tsp cornflour, a little water and 3 to 4 tbsp plain yoghurt and stir this in and sauté until thickened.
